Wine and Pizza Night: Best Sourdough Pop-up in Idaho

April 9, 2026

Rolling Hills Vineyard is hosting a Wine and Pizza Night on April 11 from 2:00 PM to 7:00 PM at our Garden City Tasting Room. This exclusive local event features artisanal sourdough pizza from a specialty pop-up, perfectly paired with our award-winning Idaho wines for a unique culinary experience.

What is the Wine and Pizza Night at Rolling Hills Vineyard?

our Wine and Pizza Night is more than just a meal; it is a celebration of local flavors and community. On Saturday, April 11, we are opening our doors to host a beloved local pizza pop-up known for their exceptional sourdough crusts. Starting at 2:00 PM and running until 7:00 PM (or until the dough runs out), guests can enjoy freshly baked, wood-fired pizzas in the heart of our urban Tasting Room .

This event highlights the connection between Idaho’s fertile Snake River Valley and our family’s Italian heritage. When Mark and Lori Pasculli first began revitalizing their vineyard in 2016, they envisioned a space where great food and gold-medal wine could bring people together. The sourdough pop-up perfectly aligns with our commitment to quality, offering a crust that is fermented for flavor and texture, providing a sophisticated backdrop for our bold reds and crisp whites.

The Secret to Perfect Sourdough Pizza Pairing

Why sourdough? Unlike standard commercial dough, sourdough undergoes a long fermentation process that creates a complex, slightly tangy flavor profile. This acidity in the crust is a fantastic companion for the structured tannins found in our Idaho wines. When you visit us, you aren't just eating pizza; you are exploring how artisanal craft enhances every sip.

To make the most of your Wine and Pizza Night , consider these pairing suggestions:

  • Cabernet Franc: Our signature varietal, rooted in our Story , pairs beautifully with savory meat toppings and rich tomato sauces.
  • Bright Whites: If you prefer a lighter pizza with olive oil and garlic, our crisp whites balance the richness perfectly.
  • Signature Blends: The earthy notes of sourdough crust pull out the hidden spice and fruit profiles in our award-winning blends.

Whether you are a seasoned connoisseur or a casual enthusiast, the interaction between the naturally leavened dough and our hand-crafted wines provides a benchmark for what local Idaho dining can be.

Why You Should Visit Our Garden City Tasting Room?

Located at 152 E. 52nd Street, our Garden City location offers a bright, relaxing setting that is ideal for a weekend afternoon. While reservations are not required for our tasting experiences, we recommend arriving early for the pizza pop-up, as these events are highly popular and often sell out before the 7:00 PM closing time.

Our Menu features a variety of award-winning options, but during this special pop-up, the spotlight is on the collaboration between the vine and the oven. It is the perfect opportunity to see why the Pasculli family’s dedication to sustainable farming and winemaking has put Idaho on the map for wine lovers across the country.

Our story is the continuation of a family wine-growing hobby that began in the late 1960s by Lori’s beloved grandfather. His small vineyard, located in the fertile soils of California’s San Joaquin Valley, was the place where fond memories were made & long-held dreams took root. Lori spent many hours riding the tractor on her papas’ lap, disking the vineyard rows together & learning the hard work of farming. After relocating to Idaho with her family in 2003, Lori’s dream took shape with fresh inspiration in the form of her children & her husband, Mark Pasculli’s, French & Italian heritage. Lori & Mark aquired a neglected vineyard of cab franc in Idaho’s vast Snake River Valley AVA in 2016. They spent years revitalizing & enriching the vineyard’s soil & made plans to care for the land in a way that is sustainable. Today, this land produces gold, award-winning wine & is the anchor of the family’s burgeoning wine business. Rolling Hills Vineyard is a true family effort, with Mark & Lori overseeing all winemaking decisions & youngest son Zach designing & putting out all marketing content. We truly hope you enjoy drinking our wines as much as we enjoy creating it. Salute, The Pasculli Family.

When they saw this old vineyard on this beautiful property in the foothills north of Boise, Idaho that needed rehabilitation they all - were all in!
